Indian Cooking Recipe : Mango Ginger Sorbet
400 g mangoes
60 g sugar
2 tbsp chopped glace ginger
2 tbsp lemon juice
2 egg whites
1½ cups water
Combine water and sugar in saucepan. Stir constantly over heat, without boiling,
until sugar is dissolved. Bring to a boil.
Boil for 10 minutes, uncovered and without stirring.
Cool and refrigerate. Blend mango flesh, lemon juice and ginger until smooth.
Add sugar syrup and process until well combined.
Pour mixture into a pan, cover with foil and freeze until set.
