Indian Cooking Recipe : Rich Fruit Cake
180 gms butter
230 gms sugar
½ tsp baking powder
150 gms tuttifruti
30 ml milk
230 gms self raising flour
½ tsp vanilla essence
50 gms almonds
Blanch almonds and chop. Mix most part of fruit with almonds.
Beat eggs with vanilla essence and set aside.
Cream butter and sugar and add the beaten eggs gradually.
Fold in half the flour and fruit mixture into creamed mixture, mix throughly.
Fold in the remaining flour and fruits. Add milk to get a dropping consistency.
Grease and flour a 8 inch baking tray and pour in the cake mixture.
You can jab the remaining fruit and chopped almonds on top.
Bake at 350ºF for about 40 mins.
After that, put off the oven and leave it inside for approx 10 mins.
Remove from oven and allow it to cool.
