Baked Stuffed Potatoes

Indian Cooking Recipe : Baked Stuffed Potatoes

Ingredients :
Other ingredients :
12 medium potatoes (old)
1½ teacups mixed boiled vegetables
1 chopped onion
1 tsp chilli powder
1 tsp soya sauce
1 teacup thick curds
6 tnsp grated cooking cheese
a little butter
2 tbsp oil
salt and pepper to taste

For the White Sauce :
3 tbsp butter
3 tbsp plain flour
3 teacups milk
salt and pepper to taste

Method :
Boil the potatoes with the skin on.
Remove the skins and cut each potato into 2 equal parts.
Scoop out the centres.
Heat the oil and fry the onion for a little time.
Add the vegetables, scooped portion of potatoes, chili powder, soya sauce and salt and cook for 1 minute.
Fill the potatoes with the stuffing.
Add salt, pepper, the curds and half of the cheese to the white sauce.
Arrange the potatoes in a baking dish, cover with this sauce and the remaining cheese.
Dot with butter and bake in a hot oven at 450ºF for 25 minutes.
Serve immediately.

For the white Sauce :
Melt the butter, add the flour and cook for 2 minutes without browning, while stirring throughout.
Remove from the heat and gradually add the milk. Mix the until well blended.
Return to heat and cook slowly, stirring throughout until the sauce thickens. Add salt and pepper and mix well.
