Indian Cooking Recipe : Feijoada
1 cup dried black-eyed beans, soaked overnight and pressure-cooked
2 tbsp oil
2 onions, chopped fine
2 tomatoes, chopped fine
6 flakes garlic, chopped fine
1 small piece ginger, made into a paste
¼ tsp turmeric powder
1 tbsp tamarind pulp
¼ tsp chilli powder or paprika powder
1 tsp sugar
salt to taste
1 cup (250 ml) coconut milk
250 g pre-cooked pork sausages (Goan)
Heat oil in a pan and sauté onion, tomatoes, garlic and ginger paste,
till golden brown.
Add turmeric powder, tamarind pulp, chilli/paprika powder, sugar, salt, coconut
milk and the beans.
Add pre-cooked sausages when the sauce is still thick.
Serve with steamed red rice.
