Indian Cooking Recipe : Vegetable Parisienne
450 gms pineapple slices
2 teacups mixed boiled vegetables (French beans, carrots, green peas, cauliflower,
1 onion, chopped
2 teacups cooked rice
½ teacup milk
4 tbsp fresh cream
2 tsp sugar
3 tbsp tomato ketchup
2 tsp chilli powder
1 sliced tomato
4 tbsp grated cooking cheese
1 tbsp ghee
salt to taste
Put the milk, sugar, half the cream and 1 tbsp of tomato ketchup in the cooked
Cook on a slow flame for at least 2 minutes.
Keep the tomatoes in boiling water for a few minutes.
Remove the skin and pass through a sieve.
Heat the ghee in a vessel and sauté the onion for some time.
Put the tomato puree, boiled vegetables, chilli powder, 2 tbsp of tomato ketchup
to remaining cream and salt.
If required, add a little sugar.
On a greased baking dish, spread a layer of rice and next spread the vegetables
Cover with the drained pineapple slices and tomato slices.
Sprinkle grated cheese and bake in a hot oven at 450ºF for at least 15
Ready to serve hot.
