Indian Cooking Recipe : Pista Kaju Sandwich
Ingredients :
For the Pista Kaju Sandwich :
Ghee for greasing
For the Pista Barfi :
1 cup pistachios
½ cup sugar
¼ tsp elaichi powder
a few drops of green food colouring
Method :
For the Pista Barfi
Soak the pistachios in warm water for 30 minutes.
Drain all the water, peel the pistachios and blend them to a fine paste in a
mixer. Keep aside.
Melt the sugar in ½ cup of water and prepare a syrup of one string consistency.
Put the pista paste, elaichi powder and green colour and cook over a slow flame.
Keep on stirring continuously for 5 to 7 minutes till the mixture leaves the
sides of the pan.
Shift to a plate and cool slightly. Keep aside.
For the Filling :
3 tbsp sugar
½ cup chopped dry fruits (almonds, cashewnuts, walnuts)
3 tbsp powdered cashewnuts
a few saffron strands
¼ tsp elaichi powder
For garnishing :
edible silver leaves
a few saffron strands, dissolved in milk
Method :
Soak the pistachios in warm water for 30 minutes.

mixer. Keep aside.
Melt the sugar in ½ cup of water and prepare a syrup of one string consistency.
Put the pista paste, cardamom powder and green colour and cook over a slow flame.
Keep on stirring continuously for 5 to 7 minutes till the mixture leaves the
sides of the pan.
Shift to a plate and cool slightly. Keep aside.
Divide the mixture into 2 equal parts.
Roll out each portion with the help of a greased rolling pin on a sheet of plastic
into a 125 mm. (5") diameter circle and keep covered.
For the Filling :
In a pan, mix the sugar with 4 tbsp of water and boil to get a syrup of 1 string
consistency
Put all the other ingredients and stir well for 2 to 3 minutes. Keep aside to
cool.
How to Proceed :
Arrange one pista barfi circle on a plate and spread the filling mixture evenly
on it.
Top with the second pista barfi circle and keep it to set for 20 to 30 minutes.
Cover with silver varq and slice the sandwich into 8 wedges.
