Indian Cooking Recipe : Baked Potato Skins Stuffed With Red Jalapeno Coleslaw
Ingredients :
4 large potato, washed and baked
100 g cabbage, chopped fine
1 onion, chopped fine
1 carrot, grated
6 chopped jalopeno peppers
2 tbsp coriander leaves, chopped
3 tbsp mayonnaise
1 tsp paprika
salt and pepper to taste
Method :
Scoop out the centres of the baked potatoes and set aside. Place the shells
back into the oven and bake again until crisp. Place all the other ingredients
into a bowl along with the centres of the potatoes and mix well. Fill the crisp
potato shells with the filling and wrap in foil.
