Grilled Scallop and Eggplant

Scallop Recipe : Grilled Scallop and Eggplant

Ingredients:


1 lb Large scallop. 
2 Asian egg plant. Cut an inch thick. 
1 Vidalia (Sweet) onion. Sliced 1/2 inch thick. 
1 Green bell pepper. Sliced. 
1 Yellow or Red bell pepper. Sliced thick. 
2 Cloves garlic. Minced. 
1 Tablespoon soy sauce. 
¼ Teaspoon salt. 
Dash of black pepper. 
ONION OIL: 
2 Stalks green onion. Chopped. 
3 Tablespoon cooking oil.

Method :

Marinated scallop with garlic, soy sauce, salt and black pepper. Set a side.
Pre-heat grill on medium temperature. When it hot places eggplant on top and grilled it for 5 minutes on each side.
Places onion and scallop on the grill, grilled till both sides golden brown.
Cook bell peppers last since it only take few minutes to grilled pepper.
Arranges grilled scallop and vegetables on a plate. Set a side.
Pre-heat a small saucepan when it hot add cooking oil and green onion.
Stirs till the green onion soft.
Pour onion oil on the grilled scallop and vegetables.
Serve hot with Sweet fish sauce dipping.
