Preheat a skillet over medium-high heat. Add
1 tablespoon of olive oil.
Crush your pork rinds in the food processor or seal them in a plastic bag and roll over them with a rolling pin. Place the salmon in a bowl; add the pork rinds and pepper (no salt needed with the pork rinds). Mix well. Form into patties, and drop the patties into your hot skillet. Fry until browned on each side and serve.
Note: If combining the pork rind crumbs and salmon with your hands bothers you, use the dough hook on your electric mixer. This will mix everything together well without over-mixing. It also works well for making meatloaf.
